Tearing Down The Mountains!

Good Morning Guys!

Well, I hope I'm back on track! It seems the last few weeks I have not been a very good boy. I have been sabotaging myself every time I turn around! I spoke about this the other day in a post titled: "Making Anthills Into Mountains", Well it's Thursday @ 7:00a.m., and I have already done my morning walk (for the 4th time this week), my lunch is made, and I am ready for the day!

I have been walking to "Leslie Sansone's" 1 Mile Walk. I realize this is an introduction, but a guy has to start somewhere!

33-0 or 117 ...Your choice!

Hey guys,
What can I say about yesterdays game! It was HOT (117 degrees on the field), and we lost 33-0! I really think the problem was the heat! We had 2 guys who had to quit because of possible heat stroke, and several more who were just warn out after the game!

Gra Mar Pirates were on fire! We never even finished the game! At the end of the 3rd quarter, the Pirates went for a 2 point conversion. Rules state that if the score was 33-0 at the end of the 3rd quarter, the game would be called! Guess what, the 2 point conversion was just enough to finish the game at the end of the 3rd quarter!


Oh well, next week is a new day! We play Murfreesboro at Madison @ 1:30. At least next week it should be cooler!

Summer Squash Casserole

Oh Wow! We had one of the best Summer Squash Casserole's I have ever had today at church! Now this makes the 4th time I have made it. If I can make it, it must be very easy! Anyway, I have got to give credit where credit due. This recipe came from Michelle over at the Obesity Help site. For those that don't know her, her screen name is M.V., but you would be more likely to recognize her avatar:

The World According To Eggface

Below you will find a copy of her "Summer Squash Casserole". We make the casserole using half yellow squash and half zucchini.

Summer Squash Casserole

3 cups sliced yellow summer squash or zucchini (or combo)
1/2 yellow onion, chopped
1 green onion, chopped (1 tablespoon chives)
1/4 cup sour cream
2 tablespoon melted butter, divided
1 egg, beaten
1 tsp. Italian Seasoning
4 tablespoons shredded Italian Blend cheese (mozzarella, fontina, etc.)
kosher salt
freshly ground pepper
2 Tablespoons grated Parmesan
2 Tablespoons Italian dry bread crumbs

Saute the squash and onion till it just gets a little color and slightly tender. Add green onions. Combine sour cream, 1 T of the melted butter, cheese, egg, salt and seasonings. Off the heat. Fold into cooked squash. Turn into buttered casserole. Combine other Tablespoon of melted butter, bread crumbs and Parmesan. Sprinkle over top of casserole. Bake at 350 degrees about 25 - 30 minutes or until browned and bubbly !

I think I have reached somewhat of a stall. Guess what, it's my fault! I just finished my psychiatric evaluation, and only have 1 more visit to my Doc for the 6 month weight management program. For the last month I have been sabotaging myself with my eating habits. I have lost a total of 56.8 pounds, now I know this is good, but as I get closer to the insurance finish line, I 'm getting scared. Maybe I can do this, maybe I can't, I don't know. People keep telling me I don't need this surgery, I've lost this much weight by myself. So...the self doubt issues surface. I know I am rambling, so please excuse me for this!

I just have one request...as we keep praying for our brother Bob, keep guys like me (I know there are other's out there!) in your prayers also!

Ham and Veggie Torta

We tried a new recipe today, and it was great! I was just goofing off with Google and typed in "WLS Recipes",this was one of several that came up. I have to give credit to Kaye Bailey though,since this is her recipe. She can be found at: Living After WLS

Instead of using 1 pound of zucchini, we did 1/2 pound each of yellow squash and zucchini.

Ingredients:

1 pound zucchini, sliced (about 4 medium)
1 package (10 oz.) frozen chopped spinach
1/2 pound fresh mushrooms, sliced
1 clove garlic, minced
6 eggs
1 cup (8 oz.) low-fat (1%) cottage cheese
1 teaspoon dill weed
1/4 teaspoon pepper
4 ounces cooked lean ham or turkey ham, diced (about 3/4 cup)
1/2 cup (2 oz.) shredded Monterey Jack cheese

Directions:

In large skillet over high heat, cover and cook zucchini, spinach, mushrooms, and garlic, until spinach starts to thaw, about 3 or 4 minutes. With fork, break spinach apart. Uncover and cook, stirring occasionally, until zucchini is crisp-tender, about 5 to 6 minutes. Drain well. In large bowl, beat together eggs, cottage cheese, and seasonings until well blended. Stir in ham and cooked vegetables.


Lightly spray 12 x 7 1/2 x 2-inch baking dish. Pour in egg mixture. Sprinkle with shredded cheese. Bake in preheated 350ºF oven until knife inserted near center comes out clean, about 25 to 35 minutes. Let stand 5 minutes before serving.

Football Time in Tennessee!


Well football season has started in Tennessee! My 9 year old son recently played in the Season Opening Jamboree. Because of the small number of players we have, he played "Iron Man Football". Both offense and defense! I was so proud of him! R.J. has always been a follower, but on the football field, he took control! He was placing players where they needed to be, and just about ran the defense. The coaches were so impressed with him, he was named Defensive Line Captain! Whoo Hoo R.J.!


We have our first game of the season against Gra Mar Pirates tomorrow. We'll just have to wait and see how they do. Either way, I am one proud papa!

I Am Changing...




I watched the movie Dreamgirls the other night and was blown away with Jennifer Hudson's performance. It was amazing. But there was one song that really stood out, "I Am changing". This was a song about someone on their last chance at making it. She was coming off months of unemployment and alcoholism. When she sang this song, I could not help but think of the decisions we make everyday, but especially the decision to have WLS. That’s right, I am changing, and I need a hand, I need support, I need help! And the support of my family and freinds is where I am finding it daily. So to all my WLS brothers and sisters, THANK YOU! THANK YOU! THANK YOU! I Am Changing !
